Does Cold or Reheated Roti Affect Blood Sugar?

You may have heard that cooling rice changes how it affects blood sugar. Something similar happens with roti — just to a smaller degree.

When a cooked starchy food is cooled, some of its starch reorganizes into a form called resistant starch, which the body digests more slowly and absorbs less completely. This is well documented for rice and potatoes — and research on Indian wheat products suggests roti shows a smaller version of the same effect.

What the research on chapati specifically found

  • A study on commonly eaten Indian wheat products found that chapati stored at refrigerator temperature (around 4°C) had a lower glycemic index and glycemic load than chapati eaten fresh off the tawa.
  • The resistant starch content of roti was found to be lower than that of dalia (broken wheat, boiled) or paratha, meaning the cooling effect on roti specifically is real but modest, not dramatic.
  • Reheating the cooled roti didn't fully erase the benefit in this research, though freshly made roti had the least resistant starch of the options tested.
Note: Don't expect a big difference

This effect is worth knowing about, but it's not a reason to eat significantly more roti because it was refrigerated first. The change in impact is real but modest — portion size still matters more.
